A fat separator is used to make it easy to remove fat from a cooking broth or other liquid. It’s shaped like a long-spouted watering can with a pouring spout located low on the base. Broth or other liquid is poured in. The fat automatically rises to the top, so that it is above the level of the pouring spout. This allows you to pour the liquid out into a separate container while leaving the fat behind. A good fat separator also has a grate or sieve to separate out any solids from the liquid at the same time. Some factors to consider when buying a fat separator are durability, ease of use and cleaning, heat resistance, whether or not it has a strainer to separate out solids, if it has easy-to-read measurement markings, and whether or not it is BPA-free.
