A cooling rack is pretty much a must if you do any baking. Racks raise baked goods off the counter, which helps them to cool faster and keeps condensation from making them soggy. If you’re in the market for a cooling rack, try to find one made from stainless steel to cut down on rust. An oven-safe rack opens up possibilities, although any coatings on the rack can limit how much heat it can be exposed to. A rack with a tighter grid pattern can keep smaller cookies from falling through; too tight and it will be harder to clean. Dishwasher safe is a plus, as is a non-stick finish. Multi-tiered racks work best in tight kitchen spaces.
