Vacuum marinators work by sucking the air out of the container holding the food and marinade, creating a vacuum, which causes the pores on the surface of the food to expand, letting the marinade seep in. When the pressure is released, the marinade is forced even deeper into those big, open pores. Models range from electric devices that pump out air, seal, and tumble the food for even distribution, to simple sealed containers that use a hand pump to remove air.
