Not only should you find wood chips in wood flavors you like, but it should also pair well with the meat you’re working with. Many wood chip packs include a variety of woods for a range of flavor, and some wood chips even add BBQ flavoring. Take note of the quantity and size of the chips, as some may burn fast, slow, or unevenly. Make sure to soak your chips for 30 minutes to add moisture and prevent the chips from burning up too quickly.
