A good cup of espresso depends on proper packing of ground coffee within the portafilter. An espresso tamper takes care of this. It looks like a stamping tool with a handle and a round, flat bottom. Espresso tampers should fit the portafilter you have. Some have 2 sides, each designed as a flat handle. These will often include a smaller side of 50 or 51 mm and a larger side of 55 to 58 mm. A tamper should be a comfortable weight and shape to allow you complete control over how hard you press. Some are calibrated, which means the handle is moveable. It will click or stop only when you put enough pressure on it, which ensures you’re using enough.
