For the avid home cook, a double boiler may be an essential piece of kitchen equipment. They consist of a straight-sided pan with a second, rounded-bottom pan that nestles inside it. Double boilers also come with a lid, however, most foods that are made in a double boiler require constant stirring so the lid is really only used when the bottom pan is used alone. For delicate foods like melting chocolate or sugar concoctions, water is placed in the bottom pan and slowly heated, which creates steam that warms the pan nestled on top. You’ll need to decide if you want a two or three-quart double boiler, and be sure to look for models with strong handles so you can move two pans at once.
